Blueberry muffins
Blueberry Muffins
Bursting with fresh berries, these simple to make muffins are the only "cake" that's acceptable to eat for breakfast!
Ingredients
- 50g unsalted butter, softened
- 100g golden caster sugar
- 1 large egg
- 75g plain yoghurt
- 1/2 tsp vanilla extract
- 1 tbsp full fat milk
- 125g plain flour
- 1 tsp baking powder
- 1/2 tsp bicarbonate of soda
- 1/4 tsp salt
- 70g blueberries (or other seasonal berries)
Instructions
1. Preheat the oven to 180C and put 6 paper cases in a muffin tin. 2. Beat the butter and sugar together until pale and fluffy. Add the egg, making sure everything's well combined, before mixing in the other wet ingredients. Add the flour, baking powder, bicarb and salt. 3. Finally, fold through the fruit and divide equally between the cases. 4. Bake for 20 mins, until cooked through, golden and delicious. 5. Cool in the tin for 10 mins, then remove to a wire rack. Best served barely warm.
