Apple & Berry Crumble
You can change the fruit for whatever's in season, but always cook the crumble separately to avoid a stodgy topping.
Ingredients
  • FOR THE TOPPING:
  • 120g plain flour
  • 60g ground almonds
  • 90g demerara sugar
  • 90g unsalted butter, diced, at room temperature
  • FOR THE FILLING:
  • 500g bramley apples - peeled, cored & diced
  • 50g unsalted butter
  • 50g demerara sugar
  • 130g blackberries
  • 130g raspberries
  • 1 tsp cornflour
  • squeeze lemon juice
Instructions
1. Preheat the oven to 170C. 2. Make a crumble by mixing the flour and sugar. Then rub in the butter, being careful not to overwork. 3. Bake on a tray for 15 minutes until starting to colour.4. For the filling, heat the butter and sugar until they reach a light caramel. 5. Stir in the apples and cook until they start to soften, but retain some texture. Add the berries, dusted with cornflour, and cook until they start to release their juices. Increase the heat and boil until reduced slightly.6. Transfer to an ovenproof dish, top with the crumble, and finish cooking in the oven for 10 minutes. Serve with ice cream or custard.
