Masala scrambled eggs

Ingredients
  • 3 tbsp vegetable oil
  • 1/2 red onion, finely chopped
  • 1 garlic clove, finely chopped
  • 1 tsp cumin seeds
  • 1/4 tsp turmeric powder
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1 green chilli, seeded and finely chopped
  • 1 medium tomato, chopped
  • 2 tbsp fresh coriander, chopped (plus more to garnish)
  • 4 large eggs
  • 2 tbsp milk
  • 2 tbsp melted ghee (clarified butter)
  • 1/2 tsp sea salt
Instructions
1. Fry the onion and garlic in vegetable oil for 3 minutes over a medium heat.2. Add the cumin seeds and cook for a further minute.3. Stir in the ground spices and fry for 30 seconds, stirring continuously.4. Add the chopped tomato, green chilli and coriander. 5. Meanwhile, lightly whisk the eggs, milk, butter and salt in a glass bowl with a fork.6. Add to the spiced vegetables and cook the eggs, stirring continuously over a medium heat, until creamy and cooked.7. Serve with roti and garnish with fresh coriander.
