Sweet chilli chicken with cashews
This is my "go-to" when I'm craving a takeaway. Depending on your tastes you can make it sweeter or more spicy, but this is a great basic recipe.
Ingredients
  • FOR THE SAUCE:
  • 50g runny honey
  • 4 tbsp soy sauce
  • juice of 1 lime
  • 3 tbsp sweet chilli sauce
  • 1 tbsp tomato puree
  • 1 tbsp white wine vinegar
  • 1-2 tbsp hot sauce (depending on how spicy you like it)
  • TO FINISH:
  • 700g chicken breasts, chopped into bite sized pieces
  • 4 heaped tbsp corn flour
  • 1 red onion, thinly sliced
  • 1tsp chopped root ginger, finely chopped
  • 2 garlic cloves, crushed
  • 1 red pepper, sliced
  • 15g coriander, chopped
  • 50g roasted cashew nuts
  • 200g broccoli florets, cooked
  • vegetable oil
Instructions
1. Gently stir the sauce ingredients in a warm pan until well mixed and the honey has melted.2. In a separate pan, fry the onions until soft then add the ginger, garlic and peppers. Continue to fry over a medium heat for another 5 minutes.3. Whilst the vegetables are cooking, dredge the chicken pieces in seasoned flour. Add to the vegetables and cook for 2-3 minutes until sealed. 4. Pour the sauce into the pan and simmer until the chicken is cooked through.5. Stir through the chopped coriander, cashews and broccoli. Serve with white rice.
