Lobster, lemon & chilli linguine
This simple, healthy pasta dish is packed with flavour and quick to make too. Serve with a simple glass of white wine and imagine you are on the Italian Riviera. Bellissimo!
Ingredients
  • 360g good quality linguine (or angel hair pasta)
  • 120ml olive oil
  • 25g unsalted butter
  • 12 cherry tomatoes, halved
  • 2 cloves garlic, sliced
  • 1 red chilli, finely sliced
  • Zest of 1 lemon, finely grated
  • 4 tbsp chopped parsley, plus extra to garnish
  • 300g cooked lobster meat (or white crab meat - from a can is fine)
Instructions
1. Cook the pasta in a large pan of boiling salted water, for 3 minutes less than the instructions on the packet. 2. Whilst the pasta is cooking, fry the tomatoes over a medium heat with the butter, and 3 tbsp of the oil, until soft but not coloured (about 3 minutes). 3. Add the garlic, chilli and remaining oil and continue to fry until the garlic is starting to colour. 4. Add 100ml of the pasta cooking water and the drained linguine. Continue cooking for a final 3 minutes. 5. Stir through the lemon zest, lobster and parsley, and heat through (about 30 seconds). 6. Serve immediately with more chopped parsley to garnish.
