Fig, mozzarella & cranberry salad
A simple but tasty salad that's surprisingly filling. The quality of the mozzarella makes all the difference. I recommend Laverstoke Park if you can get it
Ingredients
  • 400g buffalo mozzarella, drained
  • 8 ripe figs
  • 16 basil leaves
  • FOR THE DRESSING:
  • 8 tbsp cranberries (from a jar)
  • 4 tbsp runny honey
  • 40ml lemon juice
  • 20ml light olive oil
  • Sea salt and freshly ground pepper
Instructions
1. Make the dressing by putting all the ingredients into a jam jar and shaking vigourously until emulsified.2. Put slices of mozzarella on a plate interlaced with slices of fig and basil leaves. Pour over the dressing and serve.
