Stopping onions from browning when cooking

Many recipes call for onions to be softened but not coloured.  When onions brown their natural sugars caramelise, which in some recipes adds an unwanted sweetness.  

To stop this caramelisation process add a pinch of salt to the frying pan.  This will cause the liquid in the onion cells to be drawn out braising the onions rather than frying them.
